Autumn Flavours: Fig & Ham Pizza (Recipe)
‘White Rabbit Pizza’ Gluten Free Base (buy on Ocado)
For the Scamorza Cream:
50g Smoked Scamorza (diced in very small cubes)
a bit of Sigle cream
5-10g grated Parmesan
a touch of Nutmeg
Figs (Mature so they are softer and sweater)
4/5 slices Parma Ham
A drizzle of Honey
Preheat the oven to 180-200
Slowly melt the Scamorza in a pan (for ideal results use the bain-marie process).
Add gradually the single cream, a pinch of grated parmesan and a touch (just a touch!!) of nutmeg.
Melt the mixture until it becomes a cream with the consistency of a tomato sauce.
Spread the cream to the ‘White Rabbit Pizza’ base; add the figs and the honey.
Cook for 12-15 minutes until the crust is crispy and the cheese has melted
After cooking when the pizza is still piping hot add the Parma ham slices, the parmesan shavings and a touch of green pepper.
