Nick here! Matteo (Teo) and I met at The White Rabbit Pub in Oxford. I got a job working behind the bar, and Teo as a pizza chef in the kitchen. Teo grew up working in his family’s pizzerias in Milan, where he absorbed multiple generations’ worth of knowledge and passion. He helped elevate the menu at the pub, which quickly gained a reputation for delicious, authentic pizza, and was voted the best pizza restaurant in Oxfordshire on multiple occasions.
We noticed that the pub was being inundated with requests for free-from and vegan versions of Teo’s existing pizzas. The idea for the White Rabbit was born…
We realised so many people were looking for a different kind of pizza and didn’t want to feel excluded – they wanted delicious pizza! After a year of painstaking development in a tiny kitchen above the pub (which also provided us with instant feedback from our local customers), and multiple car trips to Italy to source the finest ingredients, their first range of delicious gluten-free Italian food was ready!
Today, our food includes pizza, pasta, focaccia, risotto, and ready meals, but our mission remains the same.
